Formulations for filled pasta
IPAS is able to supply preparations for filled pastas, such as gnocchi and ravioli, offering two different solutions:
- Complete filling: excellent for use with extruder machines, it is formulated with the addition of specific ingredients requested by the customer, such as tomato and mozzarella, pesto, radicchio and scamorza, or speck and brie. It has a highly standardized formulation for specific systems, guarantees a soft and easily workable dough, maintains its structure during cooking, and can sustain the addition of water if desired, giving a creamy or stretch result.
- Base for filling: Designed to give structure to the filling, the filling base has the same characteristics as the complete filling formulation, but with a neutral aromatic profile. It is ideal as a filling base, which can then be personalized by the customer with the addition of meat or poultry, cheese or vegetables.
IPAS also supplies cheese preparations in exclusive versions for use in special pastas, such as canederli and spatzle.



IPAS technology allows the development and personalization for of its intermediate products for end applications, based on specific requirements in terms of structure, sensory profile and behavior in the end application.
