IPAS preparations slice perfectly and have good elasticity, making them ideal for use in sandwiches and hamburgers.
They are always developed in such a way that they do not leak or absorb moisture from or into the end product, preventing syneresis and/or the formation of gel.
Meltability is defined on the basis of the final behavior desired (e.g. a slice which melts slightly, or a slice which melts completely). The flavor can be varied from mild to full and the texture given an “adhesive” effect if requested by the customer.
